Gorkha Gaun Resort was born out of a dream to create a place of retreat in a small gaun (village) environment. Using local resources our team works to provide a space to relax while ensuring the sustainable development of the local community. As an initiative to Responsible Tourism, Gorkha Gaun generates most of its electrical energy from solar panels, has plans for its own waste water treatment and water recycling systems, harvesting bio-gas, harvesting and recharging rain water. Gorkha Gaun has total of 16 rooms in operation with restaurant/bar and outdoor seating. Our total team members will be around 20 – 25 during our full operation period. Our Vision is to be recognized as one of the best resorts (in our category of resorts) in Nepal by 2020. We try to take sustainable approach in everything we do. Position: Head Cook – 1 based in Gorkha 

Job Description

Head Cook’s (HC) position is based in Gorkha Gaun Resort in Laxmi Bazar, Gorkha. Head Cook (HC) will be overall responsible for the development and implementation of Kitchen Operation Plan (KOP). You must be skilled at cooking and have mastered various cooking styles. You must also be an excellent communicator and work well in a team. HC will be expected to manage and supervise the overall operation of the kitchen such as food preparation, continuous improvement of the menu, inventory management, ordering supplies, management of kitchen staff for general food service and functions. 

You must possess the ability to work well under pressure and multitask, as you will have to create multiple dishes, cook at multiple stages and perform at high speed to ensure that food goes out to guests in good time and with quality. 

Primary Duties & Responsibilities:

  • Develop an ideal menu for resort set up and train the kitchen staff to ensure excellent quality throughout the offerings 
  • Responsible to create high quality dishes with the standard recipes and presentations in order to maintain quality standards and consistency of product.
  • Have an ability to change and update the menu as per the need and requirement 
  • Able to produce wide variety of bakery goods such as cakes, cookies, pies, bread and rolls, muffins, croissants and doughnuts etc. following traditional and modern recipes.
  • Develop and Implement the Kitchen Operation Plan (KOP) 
  • Plan and implement capacity development of kitchen team (about 3-4 staff) 
  • Development and implementation of Kitchen Inventory Management Plan (KIMP) 
  • In coordination with kitchen team develop recipes and menus, considering factors such as seasonal availability of ingredients, the likely number of customers, portion size and final menu price to ensure wastage control. 
  • Coordinate with kitchen team, check the quantity and quality of received products to ensure items are as ordered and standards are met.
  • Provide support and guidance as required by the management  

Requirements: 

  • School Leaving Certificate (10th grade) or High School (10+2) 
  • 2-year degree from an accredited college in Culinary Arts, Hotel and Restaurant Management, or relevant subject will be an added value 
  • Minimum of five years of professional experience as a head of the kitchen in a resort set up 
  • Experience in successful implementation of a wide range of responsibilities in a prior Kitchen position 
  • Strong verbal and written communication skills in English and Nepali 
  • Working knowledge of Microsoft Word, Excel and email 

Salary and Benefits: 

  • Starting salary will depend upon the experience and qualification 
  • 6 month probation 
  • After probation review, Dashain Bonus and other benefits will be applicable
